DANCE CAVISE NEWS

Letter From the Directors

Friends,
Another year has gone by where does it go? It seems we just get started with the children, and it's over. Our summer camp was highlighted by our sentimental trip to CATS on Broadway. After a great lunch at the Stardust CafZ, we had a private "Q and A" with some of the stars of the show. It was wonderful to see some old friends, including Marlene Danielle, an original cast member. I felt a lump in my throat when all the children, including Fiona, posed for a photo in front of the marquis with my name on it. Bye, Bye CATS.

Now, we look forward to this coming season, which brings new and exciting changes to Dance Cavise. We welcome many new teachers to our great staff: Miriam Serow, who started with Lori and I when we first opened, is back. Ann-Marie Galler, direct from STEPS on Broadway, will pump her students with the latest in Jazz and Hip-Hop. The versatile Vera Huff is a tapping "hoofer" who teaches with sounds, as well as an accomplished modern dancer and teacher. Try one of these guys and you'll be in for a treat!!

Enjoy these last few days of summer . See all of you soon.

Joe

SAVE THE DATE!

OFF CENTER DANCE THEATRE IN CONCERT

MARCH 23rd, 2001

The Performing Arts Center, Purchase College

WE'VE ADDED MORE, INTRODUCING STUDIO FOUR!!

It's onwards and upwards at Dance Cavise as we expand into our FOURTH studio. We're going up, up and up to an added studio above our heads. The new "annex" upstairs has been under construction since July. It will have the same state-of-the-art equipment and floors as the other studios. And, like all of our studios, there will be an observation window so that you can watch your little star inside.

AUDITIONS, AUDITIONS, AUDITIONS

The Off Center Dance Theatre Youth Ensemble was created for students who want to make a serious commitment to dance performance. Auditions, which are open to the public, will be held on Saturday, September 23rd. Students must be in fourth grade or older, and be enrolled in a structured dance program in Westchester County, including at least one ballet class. The Ensemble has already been invited back to the Arthritis Foundation's Mini Grand Prix in September, as well as the Sunshine House's Concert in January, benefiting the Children's AIDS Hospice. We are also looking into the possibility of workshops with the Child Abuse Prevention Center of New York in Yonkers, the Friends of Karen, Sloan Kettering Hospital and Pediatric Cancer Foundations.

BALANCE DUES

Don't forget Balances are due for all dance classes by Monday, October 2nd. As stated in your Information Guide, the studio does not send bills, nor do we make reminder phone calls. If you DO receive a past due invoice, you will incur a $25 surcharge, unless prior arrangements have been made. So, mark your calendars, NOW!

KIDS' KORNER

By Kate Parlato
(Kate, 15 years old, will be leaving Westchester and Dance Cavise for Boarding School this Fall. She will intensify her dance training.)

I have amassed a great quantity of information during my ten or so years at Dance Cavise. Indeed, most of my knowledge of dance and performance has been acquired here. And, as is condoned by Dance Cavise, I believe strongly that in order for one to dance and develop to one's fullest potential, it is necessary to be trained in many different forms of dance. As a person with aspirations of a career in Ballet, I have found that the versatility appropriated through the expansion into other dance forms is imperative.

When I began at Dance Cavise, I took only Ballet. I attempted a Jazz class because everyone else seemed to be having so much fun in it. I was too embarrassed to do an isolation in front of the class and, after a few months, I stopped going. Finally, when I was 10 years old, I took Jazz seriously. The entire first year, I looked ridiculous in my efforts to be "jazzy". Where my Ballet technique assisted in movement, it sabotaged any style I struggled to grasp. I can still remember Joe watching me with a knowing and overtly amused smile on his face each time I did a vogue or a Hip Hop move. Five years later, though, I am still taking Jazz classes and will soon begin Modern.

By taking Jazz, in addition to Ballet, I have become more comfortable with dance as meaningful movement and not only technique, flexibility, good feet, and so on. I can now be asked to do something by a teacher or choreographer and feel fairly comfortable that, because I have experience in more than one dance form, there is some way I can master that movement and the style that goes with it. I still have a long way to go, but by expanding my stylistic and technical repertoire in dance, I feel like I have a definite head start on the one-focus only dancers out there.

Joe, Lori and the wonderful staff at Dance Cavise have my immeasurable gratitude for years of satisfying and diverse study.

OH NORTHERN STAR!

Joe Cavise, Director of Dance Cavise, will be expanding his Jazz program to Northern Westchester. Mr. Cavise will be teaching three classes only at Dance, Drama, and Music in Bedford Hills. He will teach basic techniques in Jazz/Modern movement with emphasis on body placement, line and dance terminology. No previous experience is necessary.

Classes will be held on Fridays beginning September 2000!

1st & 2nd grades 3:30-4:30 PM
3rd & 4th grades 4:30-5:30 PM
5th & 6th grades 5:30-6:30 PM

TASTY TIDBITS

Anne-Marie's Cajun Red Beans and Rice
This is a dish from my Cajun relatives "down on the Bayou" in Louisiana!! The women would cook this on Mondays, which was laundry day, as they would turn the beans on in the morning, just stirring them occasionally while they washed. This version of the recipe will take much less time, I promise!!

6 links of Italian Sausage hot or sweet
(substitute spicy Chicken Sausage for less fat!!) 1 tbs. Olive Oil
1 Medium Onion, chopped
1 Sweet Bell Pepper, chopped
3 Cloves Garlic, minced
tsp. Cayenne Pepper
1 8 oz. Can of Reduced Fat Chicken Stock
2 drops Tabasco Sauce
1 tbs. Fresh or 1 tsp. Dried Oregano
Salt (and More Cayenne!) to taste

6 Cups of Fluffy White Rice

1. Using a large skillet, brown sausage until well done. Add beer or water, cover and steam for 5 minutes. Set aside.

2. In a medium saucepan, heat olive oil until hot but not smoking. Saute onion over medium heat in oil until translucent. Add bell pepper and garlic, saute for 5 minutes-do not allow garlic to burn. Add cayenne and saute for 1 minute. Stir in beans, chicken stock, Tabasco and Oregano. Cover and cook approximately 20 minutes, or until beans are softened and liquid is almost completely reduced. Add salt to taste-and more Cayenne if you like it HOT!!

3. Meanwhile, slice sausage. Add to beans with a little of the liquid in the skillet. Stir and cook for 5 minutes, or until heated through. Serve over rce with a green salad-VOILA! Dinner for 6
